Queen’s Jam (Drottningsylt)




Hej everyone!

Today's post is small and contains a SUPER easy recipe, and the only reason I'm giving it it's own post is because of the robust tradition preserving has in Swedish culture. Drottningsylt (pronounced "drott-ning-seat"), or "Queen's jam", is a blueberry and raspberry preserve and is probably one of the only Swedish preserves that we can make here in the United States. Lingonberry (featured in our Swedish Meatballs post) and cloudberry jam are two of the other popular Swedish preserves. Lingonberry jam can be purchased at most of your local grocery stores, but cloudberry is much harder to find unless you're shopping at a specialty grocery store.

Queen's Jam is a classic preserve and popular cookie filling (which we will be using in an upcoming recipe). Since both these berries are low in pectin, it is a soft set jam and will not be as thick as most jams. Being such a soft jam, it pairs well with bagels, muffins and even adding a scoop or two put into your breakfast yogurt!

Below is an easy recipe for Queen’s jam, - Njut av!



Queen's Jam
Total Time - 35 minutes; . 5min. Prep / 25min. Cook; Yields - 16 ounces

Ingredients

2 cups fresh raspberries

1 cup fresh blueberries
3/4 cup white sugar

Instructions

1. Place raspberries in a medium-sized saucepan and mash until pulverized. Add blueberries and sugar and stir until well mixed.

2. Bring to a boil and cook over medium heat for 25-30 minutes. To test the consistency of jam, place a small bowl or saucer in the freezer until cold. Remove small bowl or saucer and drop a spoonful of jam on saucer and let cool for 3-4 minutes. Push the jam with your finger, if it has jelled and you create wrinkles your jam is set. If it's still liquid, continue cooking and testing the consistency.

3. Remove from heat and pour the jam into a clean canning jar. Screw on the lid an turn the jar upside down on a hand towel to create a vacuum. Let it sit for 1-2 hours until completely cool. Store in refrigerator and eat within a month, if you want to store it longer, place jam in freezer.
